Mom's healthy meal - I don't know what to call this mix because it's not a recipe but a combination of what my child likes.
- 0,25 green peppers
- 0,25 red peppers
- 0,25 yellow pepper
- 0,125 red onion
- 2 pieces of baby sargarep
- 1 clove of garlic (squeezed)
- 1 handful of red lentils
- 1 handful of rice
- 1 handful of quinoa flakes
- 0,5 cup tomato juice
- 10 leaves of baby spinach (finely chopped)
- 1 pinch of salt
- olive oil
- Put all the vegetables (except spinach) in a deep dish and fry them in a little olive oil until soft. Squeeze out a clove of garlic and add a little salt.
- Add salted water and spinach, quinoa, rice and lentils. Let it simmer until the rice is ready. If necessary, add a little more water. About 10 minutes depending on the type of rice you use.
- Add tomato sauce and cook, stirring occasionally, for about 5 minutes.
- Cool and serve.
