Marinated Zucchini - A great way to store zucchini for the winter!

  • 800 g of young zucchini
  • 1 bunch of parsley
  • 2 teaspoons of rosemary
  • 8 cloves of garlic
  • 2 dl of olive oil
  • 2 dl of sunflower oil
  • 1 dl of vinegar
  • 15 g of granulated garlic
  1. Wash the zucchini, do not peel them, remove the ends, then cut them into rings. Rub each roll with a little salt, put them on one cloth, then cover with another to absorb the liquid they will release. Let them stand for twenty minutes. Heat the oven to 200 degrees. Cover the tray with baking paper, arrange the zucchini and bake for 15-20 minutes.
  2. For the marinade, mix chopped parsley leaves, rosemary, oil and vinegar, then add salt and pepper to taste (add granulated garlic if you like). Chop the garlic and add it to the marinade.
  3. Mix the baked zucchini with the marinade and let it sit in the cold for a few hours. Place them in warm jars, close and store in the cold.
