Mexican lasagna recipe, a variation on the Mexican lasagna recipe.
- 1 package of lasagna pasta (uncooked)
- 1 kg of chicken breast
- 3 tablespoons of extra virgin olive oil
- 2 tablespoons allspice (hot)
- 1 teaspoon curry spice
- 0,5 head red onion (chopped)
- 500 g brown beans (canned)
- 100 g tomato sauce (salted)
- 100 g sweet corn (frozen)
- 150 g cheddar cheese (grated)
- 2 pieces of spring onion

- Preheat the oven to 200 C.
- Cut the chicken meat into smaller pieces and put it in a blender for chopping. Process several times until the meat is ground.
- Heat a frying pan to medium heat. Add 2 tablespoons of olive oil. Add the chicken, allspice, curry and red onion. Fry for 5 minutes, until the meat turns brown. Add tomato juice, corn and brown beans. Simmer for about 3 minutes. Salt to taste.
- Grease the baking dish with 1 tablespoon of olive oil. Arrange the lasagna in the following order: meat mass, pasta, cheese, then repeat. Bake for 15 minutes until the cheese darkens and bubbles on the surface.
- Serve the lasagna warm on a large plate. Chop the spring onions and decorate the lasagna on top.
