Meraklijska fat pie - Kristina Gašpar

Meraklian butter pie - this fat pie was modeled after the lean pie that Aleksandar Nikolić (my dear friend) and I created together.

You can make lean meraklija pie by eliminating fatty ingredients (eggs, yogurt, cheese and ham), and instead of yogurt, use beer.

For this amount of dry ingredients, you need 2,5 dl of sour water and 1,5 dl of beer. Since beer has a bitter taste, you can reduce the amount of it in favor of sour water.

Also, if you don't like one of the ingredients, eliminate it or replace it with one you like.

Aleksandar is mostly chives, which I replaced with dill. He put spinach in the pie, and I put greens...

Meraklijska fat pie - this fat pie can be lean in a very simple way.

  • 1 cup of corn flour;
  • 1 cup of wholemeal flour of your choice; (I mostly use rye and buckwheat)
  • 1 cup of black flour; (can be white)
  • 1 spoon of dry dill;
  • 1 spoon of cumin;
  • 2 tablespoons of flax seeds;
  • 2 spoons of sesame seeds;
  • 1 teaspoon of salt;
  • 1 teaspoon of baking powder;
  • 1 teaspoon of pepper; (or to taste)
  • 1 teaspoon of garlic powder; (or to taste)
  • 3 large eggs;
  • 1 cup of yogurt;
  • 1 cup of sour water;
  • 1,5 dl of oil;
  • 300 g of greens; (spinach or Swiss chard)
  • 100 g of leeks;
  • 2 spring onions;
  • 200 g of hard cheese;
  • 100 g of ham or bacon.
  1. First, I toast the seeds if I don't already have them.
  2. Then I fry chopped leeks and spring onions in a little oil, then add chopped greens and simmer until they soften.
  3. I combine all the dry ingredients, add yogurt, egg water, the rest of the oil, and mix. Finally, I add a mixture of greens and onions, crumbled cheese and chopped ham.
  4. Lightly mix and bake in a baking tray at 200-220 degrees until golden brown (about 25 minutes).
  5. If you don't eat meat (like me), put ham or bacon in half the dough.
