Belgrade - October 9, 2018. Today, the first part of the Gastro Marathon was held in the METRO HoReCa Center, dedicated to the celebration of "Own Business Day", which the company officially organizes around the world every year, on the second Tuesday in October. Gastro Marathon is designed as a two-day, educational event (12+12 hours of free education), with the organization of various types of gastronomic presentations, workshops and lectures, which will be led by eminent experts from the HoReCa sector. This event will conclude this year's METRO Own Business Day celebration.

One of the lecturers at the workshops and presentations on the first day was Marko Lukić, the chef of CaffeCaffe&Fish, and the winner of the fish filleting competition organized at last year's event.

"I'm always happy when I have an opportunity like this one today at the HoReCa Center, to share with people some perhaps slightly more demanding food preparation techniques that are usually thought to be common knowledge - like Mediterranean cuisine." "Mediterranean cuisine is actually very daring and exciting, with unique traditional and modern preparation techniques, which can always introduce new, interesting, details into recognizable gastronomy," said Marko Lukić, holding a two-hour workshop on the topic Tastes of the Mediterranean - sea fish dishes.

During the period marking the Day of Own Business, METRO around the world through various activities tries to provide additional visibility to small and medium-sized entrepreneurs from the field of hospitality. Thus, for example, one of the key findings of the recently conducted METRO International Study of Independent Business - unequivocally shows that independent, independent, entrepreneurship is highly valued by the general public. The study was conducted on a representative sample of 10.000 people, of which 1.500 are entrepreneurs, in as many as 10 countries around the world. According to the findings, 42% of surveyed consumers consider independent business to be a valuable contribution to the local economy. In contrast, only 12% said the same about larger businesses and companies. Similarly, 39% of consumers consider independent entrepreneurs to be an important factor in creating the specificity and diversity of the environment in which they live and work. Only 12% said this applies to large companies.

That is why "Own Business Day" is dedicated to millions of entrepreneurs around the world, for whom METRO works and constantly strives to be a reliable partner in improving their business. A separate platform was organized in Serbia this year, dedicated only to small and medium-sized entrepreneurs from the HoReCa sector - which aimed to improve their business, creating a free digital map of offers available to everyone who wants to find out where they can find the best and most affordable catering services in your city or neighborhood. In this way, METRO wants to actively support and promote greater visibility of independent entrepreneurs, because this is the only way success can be mutual and sustainable.

The two-day event was organized with the support of a large number of experts in the field of hospitality, as well as with the help of METRO partners and suppliers Coca-Cola HBC Serbia and Iceberg Salat Centra.

Recipe for Cuttlefish sous-vide (workshop with Marko Lukić):

Necessary food items: Fresh cleaned cuttlefish, Tapioca beads, Cuttlefish black, Squeezed orange juice, Fresh pomegranate juice, Sugar, Agar-Agar, Carrots, Butter, Sprouts for decoration

Method of preparation: Cut the shaped cuttlefish with a knife and place in a vacuum bag, steam at 72*C for 2 hours. Cool the cooked cuttlefish, add salt and light it with a burner, and then coat it with olive oil. Boil tapioca, strain and store in water. Reduce the orange juice and add the boiled tapioca, cook together until the desired consistency and cool. Put 150 grams of pomegranate juice in a suitable container, add 50g of sugar and 2g of agar-agar, boil until it boils, strain and cool, blend when cooled and mix into a gel. Cook the carrot in a vacuum bag on steam, blend the cooked carrot with the addition of butter and make a fine puree. Add a spoonful of cuttlefish ink to the boiled tapioca, spread on a baking sheet and dry at 85*C for about 2 hours, fry in oil and serve as a decoration. Arrange all segments on a plate, decorate with tapioca chips and sprouts.
