Minestrone - an excellent and healthy meal for both adults and children. 216cal (904kJ) per serving.
- 1 tablespoons of olive oil
- 1 piece of onion (small head)
- 1 clove of garlic (squeezed)
- 140 g of bacon (2 slices, pancetta, skin and gristle removed, finely chopped)
- 100 g celery (1 stick, coarsely grated)
- 240 g carrots (or 2 medium, coarsely grated)
- 410 g tomato pieces (canned)
- 2 cups of soup (veal/beef)
- 1 liter of water (or 4 glasses)
- 0,5 cups of macaroni (about 65g, short)
- 240 g zucchini (medium, coarsely grated)
- 300 g of white beans (can also be canned but washed and drained)
- 0,3 cup basil (thinly chopped)
- Heat the olive oil in a deep bowl, add the onion, garlic, bacon and celery, stir for about 5 minutes until the vegetables soften.
- Add carrots, tomato pieces with all the juice (without draining), soup, water and macaroni. Let it boil, then reduce the heat, stir and cover the pan for about 5 minutes or until the paste is soft.
- Add the zucchini and beans and bring to a boil again. Remove from heat and add basil.
