Mint cake with strawberries - strawberry mint is a flavored herb with an intense smell and taste of fresh strawberries. It is used in the preparation of cakes, cookies, fruit salads...etc.

  • 250 g of ground biscuits
  • 75 g of margarine
  • 100 g of milk

For the filling:

  • 300 ml of sweet cream
  • 300 ml sour cream
  • 150 g of powdered sugar (maybe 200 g, if you like it sweeter)
  • 12 g gelatin powder (10-12 g)
  • 6 tablespoons of cold water (to soak the gelatin)
  • 50 g of strawberries (+ strawberry mint leaves*)
  1. Knead ground plasma biscuit with melted margarine and milk, so that the mixture is loose. Grease the mold (diameter 28 cm), the frame of which can be removed, with oil and press the biscuit mixture with your hand.
  2. For the filling, first pour cold water over the gelatin and let it swell.
  3. During this time, whip the sweet cream with powdered sugar, add sour cream, lemon or lime juice to it and mix everything well.
  4. Then, heat the swollen gelatin on the stove at a low temperature until it melts (it must not boil, just melt) and add it in a thin stream to the mixture of sweet and sour cream, mixing all the time.
  5. Wash the strawberries, dry them, clean them from the stalks and cut them in half, then sprinkle them with finely chopped strawberry mint leaves*.
  6. Place them densely next to each other on the prepared base and fill with sweet and sour cream filling.
  7. Put in the fridge overnight.
  8. Decorate the top of the cake with strawberries and strawberry mint leaves* (strawberry-flavored mint)
