  • 1 cup (of 2 dl) oil
  • 2 cups of yogurt
  • 1 cup white wheat flour
  • 1 cup of cornmeal
  • 1 cup polenta
  • 1 baking powder
  • 1 teaspoon of salt

Everything is in balance. Proja - sweet and salty; healthy and juicy; light and soft, although it can also be tough and tough. That's how it is, when making proja. Making proja is like a series of contradictions, because proja is always made from several ingredients.

You can try to keep things under control, so that every ingredient has its place in the pan, in that miniature world, because making food is empowering, and you have complete control over all the ingredients.

Proja with cheese, detailed procedure for preparing proja.

  • In the mixing bowl, add all three types of flour (white wheat, corn and polenta). Then add baking powder. Mix well with a spoon or spatula, so that the flour and baking powder are even.
  • Beat the eggs in a separate bowl.
  • Add oil to the flour mass, mixing with a mixer at low speed. When the mass is even, add beaten eggs. Add salt. Continue mixing with a mixer at low speed.
  • When the mass is even, add the crumbled cheese and mix with a spoon or spatula. If you like larger pieces of cheese in your proja, crumble the cheese into larger pieces and mix gently so that it doesn't crumble too much. If you want the proja to be juicier, divide the provided amount of cheese into two types of cheese: one half of older and fattier cheese (like feta), and the other half of younger and more moist cheese. Try the ratios of the two cheeses and find the ratio that suits you best.
  • Pour the prepared mass into a deep tray with high sides (the larger the tray - the thinner the pan, the smaller the pan with the high sides - the thicker the pan).
  • Proja with cheese is baked in a heated oven at 200 C for between 20 and 30 minutes (depending on thickness).

Recipe for proja with various additives

A classic recipe - proja with cheese, can always be enriched with some addition.

Greens or spinach are the best for something like that. Adding some spinach or greens to the proja gives it density, softness and a nice contrast of green color.
