Leskovac mućkalica - Suzana Mitić - the best recipe of the month of September 2015
Leskovac mućkalica my way. Summer is the season of vegetables, so you can enjoy this lunch more often.
With homemade bread or hot peppers? Decide for yourself. This dish somehow brings me back to my childhood, it's not demanding, it's quick to prepare and I just love it. Yes, I have connections with the "Southern Railway".
ingredients:
- 4 drumsticks with drumsticks
- 1 large zucchini
- 3 larger carrots
- 3 onions
- 3 cloves of garlic
- 1 celery root
- 1 leek root
- 1 parsnip root
- 3 tomatoes
- 3 large peppers - it is best to use 1 green, 1 red and 1 yellow pepper, for decoration
- salt to taste
- 1/2 teaspoon pepper
- 1/2 teaspoon ground paprika
- 1 level spoon of herbs
- 2 bay leaves
- 3 spoons of ajvar
- 2 tablespoons of oil
- hot pepper if needed and desired
- chopped parsley if desired
<strong>Preparation: </strong>
- Cut the onion into small pieces.
- Fry the onion in oil until it becomes glassy.
- Add the chicken meat, separated from the skin and bones, cut into small pieces.
- Carrot, celery and parsnip, clean and cut into desired pieces.
- Reduce the temperature, pour a little water, about 1 dl, and let it simmer.
- Peel the tomatoes, cut into strips and add to the mixture.
- It is not necessary to add more water, let the vegetables stew in their own juice, at a low temperature.
- Clean the pepper from the seeds and cut into strips.
- Peel the zucchini and cut it into cubes.
- Add bay leaf and chopped garlic.
- Salt to taste.
- Add all other spices.
- Let the excess water evaporate.
- At the end, add ajvar.
- Let it boil for a few more minutes to combine all the ingredients.
- Remove from heat and decorate with chopped parsley.
- Enjoy the taste. Pleasant.
Note: You can make Leskovac mućkalica from any meat, with or without bacon. You can use any vegetables you have in the fridge. You don't need a precise measurement. The recipe is always successful, there is no mistake. Hence the name - "Leskovačka".
