Wild duck spread - an unusual spread. An unusual specialty from my kitchen. We just love it!
- 1 piece of wild duck
- 2 pieces of carrot
- 2 onions
- 2 bay leaves
- 1 teaspoon of mustard
- salt (to taste)
- pepper (to taste)
- 1 spoon of herbs
- 0,5 teaspoons of allspice
- 1 piece of lemon juice
- 200 g of mayonnaise
- "Skin" the wild duck. Rinse it with water, put it in a suitable pot and pour water over it.
- Let it boil and discard the water. Pour another water and bring to a boil. When it boils, reduce the temperature and add the cleaned carrot, onion head, salt, pepper and bay leaf. Cook for 90 minutes on low heat. When the meat is cooked, take it out and let it cool down. Strain the liquid and cook the soup of your choice in it.
Separate the meat from the bones and cut it into smaller pieces. Put it in a blender or a meat grinder. - Add a head of onion and blend or grind 2 times in a meat grinder. Then add mayonnaise, mustard, herbs, lemon juice and herbs. Mix everything with a mixer.
- If you want, you can add a little more mayonnaise if you want your spread to be thinner.
- Decorate with parsley and enjoy an unusual meal.
