Integral pasta and grilled vegetables as a quick lunch option

Many do not accept the taste of integral pasta. But, if it is "packaged" well, there is no reason to worry if one of your household members does not like this pasta.

For those who eat meat, I recommend adding grilled bacon or ham to this salad meal. Grilled white meat can also come into consideration.

Salad meal - wholemeal pasta and grilled vegetables, ingredients (for 3-4 people):

  • 300 g of wholemeal pasta
  • 500 g of mixed vegetables (zucchini, peppers, eggplant, mushrooms...)
  • 2 dl of tomato juice
  • 2 cloves of garlic
  • 2 tomatoes
  • 2 tablespoons of oil of your choice
  • to taste: salt and pepper
  • 150 g of mozzarella
  • basil leaves

If necessary: ​​white meat, ham or bacon

Salad meal - wholemeal pasta and grilled vegetables, preparation:

  • Cook the pasta al dente.
  • Grill vegetables (except garlic and tomatoes) on the grill or in a grill pan.
  • If you decide to add meat, roast it on the grill.
  • Cut the vegetables (and the meat supplement) into smaller sticks.
  • Combine the pasta, vegetables and meat supplement.
  • Add tomato juice, chopped garlic, chopped tomatoes. mozzarella, oil, basil leaves and season to taste.
  • You can serve the meal salad prepared in this way both warm and cold.

To taste, you can add hot pepper to the salad.

Preparation time: 10 minutes. Thermal treatment: 20 minutes.
