The second Dough, Pasta and Bread Festival TESTIVAL #2 was held last weekend in Dorcol Platz

Association TESTIVAL i Dorcol Platz, hosted the Festival of dough, pasta and bread TESTIVAL #2, during the past weekend. The topic of this TEST #2 was BREAD, because in our nation, bread has always been more than anything else, both in the food culture and as a ritual meaning.

On TEST #2 many dishes were sold and tasted, which are rarely found on our tables: pie with quinces, pasta with chocolate, salčići, pie with raspberries and hot peppers, bread with pumpkin, tain bread, Sombor langoš, Russian peljemeni, buns made from chervil baked under the sach, ...

Is it possible to make five types of small cakes in half an hour? This was shown and proved by the theater and film diva Gorica Popovic! With the help of Dragan Ilić i Dejan Ilic from the TESTIVAL Association, Gorica excelled on stage! Five kinds of cakes were tasted in a flash!

This time, it all started with an inclusive workshop in collaboration with Union of MNRO Associations and the Association We live together from the municipality of Stari Grad. The young students listened with great attention to their mentor, Dejan Ilic, vice president of the TESTIVAL Association, to learn how to knead and prepare bread. Miodrag Ilić, the president of the TESTIVAL Association, presented gifts to Marijana Taranović from the Association of MNRO Associations, in which he was joined by Aleksandar Krstić, the owner of the brand My soap.

"Our daily bread", discussion panel, which was held on 17.10.2020. on the International Day of Intangible Cultural Heritage, confirmed the important place of bread in the food culture and cultural heritage of a nation. The participants of the panel were Dr. Biljana Đorđević, museum advisor from the National Museum in Belgrade, Dr. Milica Aleksić, manager of the Metro HoReCa center, Snežana Đuričin Kuštrimović, graduate art historian and Dimitrije Vujadinović, director of the BalkanKult Foundation and author of the book Cipovka - bread that smiles at the moon. He was the moderator Miodrag Ilić, president of the TESTIVAL Association and author of the book Traditional Serbian Recipes.

During the two festival days, in addition to the sales exhibition of over twenty exhibitors of home-made, artisanal prepared products, over ten interesting workshops took place on an improvised stage.

Metro HoReCa center i Junior Chefs Club, led by Dr. Milicom Aleksić, manager, and Nebojš Veselinović, chef of the HoReCa center, showed their high professionalism, preparing various types of Italian breads, as well as special, gluten-free restaurant breads and pastries.

TESTIVAL #2 also hosted the competition for the best pancake cake, in partnership with Association of Authentic Hedonists (AAH!) and with the support of the company Tupperware. The best pancake cake, both in terms of appearance and taste, was declared a savory cake - cheese cake (Dragana Šuša). Association of Authentic Hedonists and its president Dragan Djordjevic, together with Dragoslav Jovanovic, the founder of the school of nutrition in nature, "Food Becomes Joy", showed that everything healthy and natural... and Hedonistic, can be prepared with the most modern kitchen appliances.

Dejan Ilic from the TESTIVAL Association showed how to make the best bender's pie, and Snezana Djuricin from the Center for Research and Promotion of Cheese, with the presence Petrov Dairy, Farms Ranilović i Verice Gođević, how the quality of the cheese is evaluated.

And how the burek "flies", while the crusts develop, in the most effective way, the master showed Miloš Damjanović, the champion of Serbia in making burek with cheese at the 2018 Pekarijada.

At the end of the second day, two separate juries struggled to choose the best of the great exhibitors and products.

The title of the best BRAND TESTIVALA brought by the team Umami, which charmed all visitors for two days with its value, energy, innovation and kindness. Unusual, delicious dark breads and unique types of pasta made from organic ingredients. At the awarding of the valuable diploma, the jury pointed out that the Umami brand stood out from the other, equal candidates, not only because of its superior workmanship and quality, but also because of its investment in the development of its brand.

Owner of the Umami brand, Marina Ocokoljic, she stated: "Thank you because from the beginning, from the very first call, you sincerely believed in us, recognizing in our work the potential to create a brand. That is why this title is as much ours as it is yours, as well as all those who stand by us with love. We are very satisfied, and honestly speaking, this manifestation is by far the best of all the ones we have participated in."

For the best TESTIVAL PRODUCT one product and two manufacturers are selected! The best product is bread with sun-dried tomatoes, which she prepared Rada Bogoev, using flour from Sretenović water mill, owned by Tomislav Sretenović. "Thank you to the organizers, TESTIVAL Association. Thanks to the expert jury. My bread is like that because of the excellent organic flour from the Sretenovića mill, my yeast and love, and it also won its first prize. I'm very happy. This is a confirmation that I am on the right path," said Rada Bogojev.
