Pancakes with beetroot and cheese - you can serve these decorative pancakes as an appetizer or for breakfast, dinner...
- 130 g of beets (boiled)
- 1 dl of milk
- 7 tablespoons flour
- 1 egg (larger)
- 0,5 teaspoons of salt
- 3 tablespoons of oil
- 200 g of cheese
- 3 tablespoons sour cream (or cream cheese)
- Mash the cooked beets. Beat eggs, flour, milk and salt with a mixer as for pancakes. At the end, add the beets and mix everything well. Pour oil into the pancake pan and when it heats up a little, pour it into the prepared mixture. Pour the mixture onto the heated pan so that it is about 1/2 cm thick and fry the pancake on both sides.
- Repeat the process until you use up the mixture.
Put the cheese and sour cream (or cream cheese) in a small bowl and mix everything well to make it a compact and smooth mixture. Fill the pancakes with it and roll them up.
Before serving, cut the pancakes into finger-width rings.
