This recipe for tomatoes stuffed with tuna is prepared quickly, without cooking, with a mixture of tuna, capers, parsley, lemon juice, and olive oil, which allows the tomatoes to shine.

  • 4 pieces of tomato
  • 200 g of tuna (canned in natural juice)
  • 3 tablespoons of capers
  • 3 tablespoon of lemon juice
  • 2 tablespoons of olive oil
  • sea ​​salt (to taste)
  • pepper (ground, to taste)
  • parsley (fresh)
  1. Wash the tomatoes, cut off the top and hollow them out. Remove the seeds, and leave the flesh of the tomatoes chopped and put in a bowl for mixing the ingredients. Sprinkle a little salt on the inside of the tomatoes and let them drain.
  2. Take the tuna out of the can and let it drain. Put the tuna in the bowl for mixing the ingredients, add the tomato flesh, capers, chopped fresh parsley, lemon juice, olive oil. Add sea salt and pepper to taste. Mix well.
  3. Fill the tomatoes with the resulting mixture. Garnish with fresh parsley leaves. Leave in the refrigerator for 15-30 minutes to cool. Serve cold.
