Pasta Primavera - a very simple recipe that takes very little time. Tasty and intriguing.
- 1 bunch of basil
- 3 cups chicken broth
- 0,5 cups of olive oil
- 2 cloves of garlic
- 500 g of pasta
- 1 piece of leek (white part, and the beginning of the green, chopped)
- 1 spring onion (chopped)
- 2 pieces of hot pepper (seeds removed, chopped)
- 2 pinches of sea salt
- 2 pieces of zucchini (diced)
- 1 cup peas (peeled)
- 1 bunch of asparagus (chopped)
- 0,5 cup parmesan cheese
- Fill a large pot with water, add a little salt and bring to a boil. Plunge the basil into the boiling water for about 2 seconds, then place it immediately under cold water. Separate the basil leaves from the stems.
- Place basil leaves, 1 cup chicken broth, 1/2 cup olive oil, garlic in a blender and process until smooth.
- Add the pasta to a pot of boiling water and cook until half cooked, about 8 minutes. Drain.
- Heat a large frying pan on medium temperature with 2 tablespoons of olive oil, add leeks, spring onions, simmer for 5 minutes. Add hot pepper and salt and simmer for another 5 minutes.
- Increase the temperature, add 2 cups of chicken broth, zucchini and peas. Simmer for 5 minutes. Add the asparagus and sauté for about 3 more minutes.
- Add the mixture from the blender and simmer for about 1 minute more. Remove from heat.
- Put the pasta in a large dish and pour over the mass from the pan. Mix well. Sprinkle with grated parmesan cheese. Cover with a lid or aluminum foil for 5 minutes before serving, so that the pasta can absorb the juices and aromas. Stir before serving. Pleasant.
