Trout with almonds – recipe for trout with almonds is very present in French cuisine, but, with small modifications, it is very popular in many other cuisines, where it is possible to buy fresh trout in the market. Almond sauce is prepared with lemon juice, or white wine, optional.

Trout with almonds - the recipe for trout with almonds is very present in French cuisine, but, with small modifications, it is very popular in many other cuisines.

  • 4 pieces of trout (fillets)
  • 1 teaspoon of sea salt
  • pepper (freshly ground)
  • olive oil
  • lemon peel (grated)
  • 2 pieces of lemon juice (from 2 lemons)
  • 50 gr almonds
  • 1 bunch parsley
  1. Wash the trout fillets and dry them well with a paper towel. Season with sea salt and sprinkle with freshly ground pepper.
  2. Wash and finely chop the parsley. Grate the zest of 1 lemon. Squeeze the juice of 2 lemons. Chop the almonds.
  3. Heat a pan and add just a little olive oil. Bake the side with the skin first (if left), 4-5 minutes. Carefully turn and cook for another 2-3 minutes. Leave the fish on a heated plate or in a slightly heated oven (so that it does not cool down).
  4. Preparation of the sauce: add a little more olive oil to the remaining oil in the pan. Add chopped almonds. Sauté for about 1 minute, until the almonds turn golden. Remove from heat, and immediately add chopped parsley, freshly grated lemon peel and lemon juice. Mix well to combine the ingredients.
  5. Serve the fish on heated plates and sprinkle with hot sauce. Serve potato salad or Swiss chard as a side dish.
