The favorite lunch of many, since ancient times, can be prepared very quickly. How do you prepare beans from a pressure cooker?

Beans from the pressure cooker, ingredients:

  • 500 g of white beans (smaller or larger, according to your choice, taste and habits)
  • 2-3 heads of onion
  • 3-4 cloves of garlic
  • 2 teaspoons of salt
  • 2 carrots
  • 1 leek top
  • 1 fresh red pepper
  • 3 dried peppers
  • 2 teaspoons of allspice
  • 1 teaspoon of oregano
  • 100 ml of olive oil
  • 1 tablespoon fat
  • 150 ml of pureed tomatoes
  • 100 - 200 g of smoked meat bacon (instead of bacon, you can put any dried meat, e.g. ribs, buttock, etc.)
  • 3 dried bay leaves
  • 1 tablespoon of dry herb seasoning
  • a pinch of pepper
  • a pinch of hot pepper
  • 4 teaspoons of baking soda

Beans from the pressure cooker, preparation:

  • Leave the beans in water overnight. Add one teaspoon of baking soda.
  • In the morning, put the pot with the beans on medium heat to boil. Throw away the water. Pour water, with the addition of one teaspoon of baking soda and boil again. Throw away the water. Pour water, with the addition of one teaspoon of baking soda and boil again. So, in total, boil the beans three times and discard the water three times. Rinse the beans with cold water and set aside.
  • In an 8 l pressure cooker, add oil and a spoonful of fat, then chopped vegetables: onion, garlic, carrot, leek, pepper, dried pepper.
  • Add one teaspoon of baking soda.
  • Then, add all the necessary spices: salt, pepper, allspice, dry herb seasoning, bay leaf, crushed pepper, oregano.
  • Turn on medium heat and simmer for about 10 minutes.
  • Add the pureed tomatoes and simmer for 5 minutes.
  • Add the strained beans and chopped bacon (or some other dried meat), then, while stirring, simmer for a few minutes.
  • Pour water up to 2/3 of the volume of the pot. Close the pressure cooker and cook the beans for 45 minutes, according to the instructions for your pressure cooker.
  • When the pot has cooled, serve the beans.

Note: Baking soda makes the beans easier to digest. This amount is enough for lunch for 5-6 people.
