Beans a la Mexicana - beans, corn, hot pepper and a little more...

  • 2 tablespoons oil (optional)
  • 1 head of red onion (or black, smaller)
  • 2 pieces of bell pepper (medium)
  • 2 pieces of tomato (medium)
  • 1 clove of garlic
  • 2 handfuls of sweet corn
  • 2 handfuls of cooked beans (optional)
  • 1 pinch of sugar
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of crushed hot pepper
  • 1 pinch of parsley
  • 1 pinch of basil
  1. Cut the onion into thin rings and fry them in hot oil until golden brown. Stir the onion during frying so that it does not burn. Add chopped peppers, tomatoes, garlic and corn. Simmer in an uncovered pan, at a high temperature, for about 5 minutes, then add the cooked beans as well as the listed spices to taste.
  2. Instead of fresh tomatoes, you can use canned tomatoes or tomato sauce. If you don't have fresh basil on hand, use dried.
