Beans with rice - a super fasting dish.
- 400 g of red beans
- 2 pieces of carrot
- 500 g of leeks (white part)
- 100 g of rice (long grain)
- 1 dl oil
- 3 cloves of garlic (2-3 cloves)
- 1 teaspoon of ground red pepper
- 2 dl of tomato juice
- so
- pepper (ground)
- parsley (chopped)
- Soak the beans in water to stand overnight.
- The next day, drain the water, pour the water and boil for 5-10 minutes, drain again, add new water and cook until cooked.
- Fry 2 grated carrots and chopped leek in rings in oil. Fry for 10 minutes, add washed and drained rice, ground red pepper.
- In a greased baking dish, put beans drained of water, add leeks with rice, salt, ground pepper, chopped parsley, 2 dcl of tomato juice, pureed garlic, mix and pour hot water to soak.
Bake at 200 degrees for 30 minutes until the rice softens and absorbs the water.
