Pavlova cake is a dessert designed and prepared by a chef in honor of the Russian ballerina Pavlova.
The base is a crispy and creamy crust made of egg whites, which represents the ease of movement of a ballerina, followed by white whipped cream, and optional fresh fruit that completes this wonderful delicacy.
Pavlova cake, ingredients:
- 5 egg whites
- 15 spoons of sugar (10+5)
- 1 spoons of density
- 1 tablespoon of neutral vinegar
- 2,5dl of sweet cream
- 2 spoons of powdered sugar
- fresh fruit as desired

Pavlova cake, preparation:
- Beat the egg whites while gradually adding 2/3 of the amount of sugar.
- When the mass becomes solid and shiny, add a spoonful of thickeners and a spoonful of vinegar.
Then add and gently combine the remaining 1/3 of the sugar. - Spread the mass in a circle on the baking sheet.
- Bake for 90 minutes at 120 degrees.
- Transfer the baked crust to a serving tray while still warm and leave to cool.
- Beat the sweet cream with powdered sugar and spread over the cold crust.
- Decorate arbitrarily with fresh fruit.
Approximate preparation time 120 minutes.
