Mushrooms with eggplant.

  • 1 piece of blue eggplant
  • 150 g of champignons (coarsely chopped)
  • parsley
  • 20 g of basil
  • 1 tablespoon of raisins

  1. Wash the blue pantljidzan and cut it in half. Cut one part into rings and clean the other, ie remove the fleshy part. Salt the rings and let them stand for a while so that the salt kills the bitterness.
  2. After that, boil them in boiling water, drain, coat with oil and put in the oven to bake.
  3. Roughly chop the mushrooms and fry them in hot oil.
  4. Add the fleshy part of the eggplant, basil, salt, pepper, nutmeg, parsley and raisins.
  5. Simmer for another minute and then cover the roasted eggplant rings with the mixture.
  6. Then sprinkle with pepper.
