Fries, ingredients:

  • 2 pork legs and 2 smoked and something else dry of your choice
  • 2 beef legs
  • 6-10 peppercorns
  • 2 bay leaves
  • 1-2 heads of garlic
  • 1 connection various green, who likes

Pichte, preparation:

  • Clean the pork and beef legs well, dry them, wash them, put them in a large pot, pour 5 liters of water and let them cook on low heat.
  • When it boils, remove and discard the foam. When the foam stops bubbling, add peppercorns, bay leaves, a bunch of cleaned greens and a little salt. Cooking should last about 4-5 hours, that is, until the meat starts to separate from the bones. The water should boil halfway and be more sticky.
  • Remove the pot from the heat and let the contents settle a little. Pick up and discard the fat that floats on the surface. Then strain through a thick strainer and separate the meat from the bones.
  • Arrange the meat in several dishes, sprinkle with finely chopped garlic, pour the strained broth, sprinkle ground pepper on top and leave in a cold place to set.
  • Sprinkle with crushed paprika and serve as an appetizer.
