A recipe for chicken meatballs with white wine and mashed potatoes, a delicious choice for lunch or dinner. At the same time, it is also very economical.

  • 4 pieces of chicken breast fillet
  • 1 piece of bun (remove the middle)
  • milk
  • 1 tablespoon parsley (fresh, chopped)
  • so
  • olive oil
  • 1 dl white wine
  • 50 g of butter
  • parmezan
  • 500 g of white potatoes
  1. Remove the center from one bun and dip it in a little milk. Leave to drain. Put the white potatoes to cook.
  2. Chicken breast fillets (4 pieces), grind in a meat grinder, twice. Place the ground chicken in a mixing bowl, and add the drained, soaked bun mixture, parsley and salt, and mix until smooth. Divide the mass into 4 equal parts and make four flat meatballs.
  3. Add a little olive oil to the grill pan and cook the meatballs until the underside is golden brown. Then turn them over, so that the other side is browned, then sprinkle them with white wine and cover the pan to simmer for another 15 minutes at a moderate temperature.
  4. When the potatoes are cooked, peel them and mash them well. Melt 50 g of butter in a deep dish and add mashed potatoes. At a moderate temperature, mix until the butter is combined with the potatoes. Then add about 2 dl of warm milk and salt and pepper, to taste. Stir vigorously until the puree becomes frothy.
  5. Serve the meatballs with mashed potatoes on a warmed plate, garnished with fresh parsley leaves and thin leaves of grated Parmesan cheese.
