Chicken kebab - this is an interesting Greek recipe, which can break the classic routine of grilling chicken. If you want to honor the Greek way of serving, make it pie bread, tzatziki salad i Greek salad. You can replace the chicken with young lamb, and you can add vegetables to taste and according to your current choice.

Chicken kebab - this is an interesting Greek recipe, which can break the classic routine of grilling chicken.

  • 40 ml of olive oil
  • 40 ml of lemon juice
  • 40 ml of white vinegar
  • 1 clove of garlic (minced)
  • 1 g cumin (ground)
  • 1 g oregano (dried)
  • 0,5 g of thyme (dried)
  • 1 g of salt
  • 0,4 g black pepper (ground)
  • 600 g of chicken white meat (without bones and skin, cut into pieces of about 2 cm)
  • 4 pieces of skewers (wooden)
  • 1 piece bell pepper (large green or red, cut into pieces about 2)
  • 1 piece of onion (larger, cut and separated into pieces)
  • 8 pieces of cherry tomatoes
  • 8 pieces of mushrooms (fresh)
  1. Whisk olive oil, lemon juice, vinegar, garlic, cumin, oregano, thyme, salt, and black pepper together in a large bowl. Add the chicken and mix with your hands, so that every part of the chicken is well covered with the marinade. Cover the bowl with plastic wrap and leave to marinate in the refrigerator for at least 2 hours.
  2. Soak the wooden skewers in water for about 30 minutes before use.
  3. Heat an open grill or grill pan over medium heat. Add a little oil to a griddle or grill pan.
  4. Remove the chicken from the marinade and shake off the excess liquid. Discard the remaining marinade. Alternately arrange pieces of marinated chicken with pieces of pepper, onion, cherry tomatoes and mushrooms on the skewers.
  5. Grill the kebab skewers on a heated grill or grill pan, turning frequently, until nicely browned on all sides, and the chicken is no longer pink in the center, about 10 minutes.
