Brazilian-style chicken, a great main dish, to end a hard day's work. Serve the chicken over cooked rice.
- 4 pieces of chicken meat (fillets (without skin and bones), (each piece approx. 250 gr))
- sea salt
- ground pepper
- 5 tablespoons of olive oil
- 1 red onion (finely chopped)
- 1 piece green pepper (finely chopped)
- 2 cloves garlic (finely chopped)
- 1 teaspoon ground paprika
- 0,5 cup fresh mushrooms (chopped)
- 1 cup sun-dried tomatoes
- 1 tablespoon of tomato extract
- 2 cups of chicken soup
- 0,5 piece of lemon juice
- 1 teaspoon horseradish (grated)
- Rub the chicken fillets well with salt and pepper.
- In a large saucepan with a lid, heat the olive oil over medium heat. Sauté the meat in groups of 2, covered, for 4-5 minutes on each side, or until golden brown. When the meat is ready, wrap it in aluminum foil and set it aside so it stays warm and doesn't dry out.
- In the same pot, add the red onion and pepper and sauté for about 5 minutes, until they soften. Add the garlic and ground pepper and sauté for about 1 minute. Add the mushrooms and sauté for about 5 minutes. Add the sun-dried tomatoes and tomato extract and simmer for 2 minutes, stirring constantly. Add the chicken stock, increase the heat and bring to a boil. After that, reduce the heat to medium. Let it simmer for about 5 minutes. Add the chicken, lemon juice and horseradish, and let everything marinate for another 10 minutes. Add salt and pepper to taste.
- Serve the Brazilian-style chicken warm over prepared rice. Pleasant!
