The basis of this dish is chicken - chopped sticks of chicken white meat. A delicious dish, and it's quick to prepare.

Advice: if you find it difficult to cut fresh chicken white meat, leave it in the freezer for about 15 minutes to harden. After that, it is easier to cut it into sticks.

Chicken with vegetables and wholemeal noodles - wholemeal noodles, which are made from wholemeal flour with the addition of buckwheat flour (Soba Noodles) are a delicious addition, regardless of whether the dishes are hot or cold.

  • 0,5 cup chicken soup
  • 1 teaspoon of cornstarch
  • 0,25 teaspoons of sesame oil
  • 200 g of whole noodles (Soba Noodles)
  • 1 tablespoon of oil
  • 250 g of chicken white meat (without skin and bones, cut into sticks)
  • 150 g of mushrooms (cut into cubes)
  • 2 cloves garlic (finely chopped or passed through a garlic press)
  • 1 teaspoon fresh ginger (grated)
  • 200 g kale (chopped into sticks)
  • 1 piece sweet red pepper (cut into sticks)
  • 1 piece spring onion (finely chopped)
  1. In a bowl, mix together the chicken broth, cornstarch, vegetable oil and sesame oil.
  2. Cook wholemeal noodles in a deep pot, according to package instructions.
  3. Heat a large non-stick frying pan, or wok, to medium heat. Add one teaspoon of oil. Simmer the chicken, stirring constantly, until it is half cooked, about 3 minutes. Remove the chicken to a plate.
  4. Add the remaining oil. Add the garlic, ginger and mushrooms. Simmer for 1 minute, stirring constantly. Add the kale and red pepper, and simmer, stirring constantly, for about 4 minutes.
  5. Add the chicken soup mixture, chicken, and wholemeal noodles and simmer, stirring constantly, to combine and the flavors blend, 1 to 2 minutes. Sprinkle with chopped scallions and remove from heat. Serve warm. Pleasant!
