Chicken with porcini mushrooms, arugula and parmesan is an old recipe of Italian cuisine (Straccetti di pollo). A delicious dish that is quickly prepared.

  • 600 g of chicken white meat (fillets)
  • flour

  • White wine
  • 100 g of dried porcini mushrooms
  • 200 g of rocket (200 g)
  • 100 g of Parmesan cheese
  • extra virgin olive oil
  • cherry tomatoes
  1. Soak dried porcini mushrooms in water for about 20 minutes.
  2. Cut the chicken fillets into strips. Pour flour into the plate. Roll each strip of chicken meat in flour. Clean the clove of garlic and crush it with a knife.
  3. Heat the olive oil in a frying pan, on a medium temperature. Add a clove of garlic. Add chicken strips to stew. Simmer for 3-5 minutes. Season with salt and pepper.
  4. Add porcini mushrooms, stirring. Add a few tablespoons of water in which the porcini mushrooms were standing. Stew while stirring. After 3 minutes, add a little white wine, not too much. Continue stewing, while stirring. Simmer for another 3-5 minutes, until the sauce thickens. Remove the clove of garlic.
  5. Pour the finished dish onto flat plates, and put arugula on top. Salt and pepper to taste. Arrange wide strips of grated Parmesan over the rocket. Garnish with sliced ​​cherry tomatoes.
