Pinđur recipe, a traditional recipe, which is very popular among all Balkan peoples. It is similar to ajvar, but differs in what it is the main ingredient is eggplant, not paprika.

Pinđur recipe, a traditional recipe, which is very popular among all Balkan peoples. It is similar to ajvar, but differs in that its main ingredient is eggplant, not paprika.

  • 3 kg of meaty red pepper
  • 1,5 kg blue eggplant
  • 1 kg fleshy tomatoes
  • 500 g of hot pepper
  • 1 liter of oil
  • so
  • garlic
  • wine vinegar
  1. Roast the peppers and hot peppers on the stovetop, and roast the eggplant and tomatoes in the oven.
  2. Peel everything, then drain well in a large colander (you can leave it to drain overnight). Then, grind with a machine on a coarse grater (never in a blender!), because, in the original pinđur recipe, grinding should be done in a wooden bowl, with a wooden mallet.
  3. Drained, put all the mass in a large pan, add salt to taste, add finely chopped garlic, also to taste, and gradually add oil, with constant stirring, on low heat, until the pinjure is fried and all the excess water evaporates. Be careful that the mass does not burn.
  4. Finally, add wine vinegar to taste. Be careful - acidity should not be the dominant taste.
  5. Pinđur should be consumed with strong white sheep's cheese and fresh crusty bread.
