Nettle pie.

ingredients:

From the ingredients we need, first for the dough: 300 ml of lukewarm water, 1 teaspoon of salt, 500 g of soft flour, 1 coffee cup of oil.

For the filling we need: 200 g of fresh nettles, 300 g of cheese as desired, 2 cloves of garlic, 1 onion, 1 spoon of sour cream, 1 egg and a little pepper.

And for coating we will need: 3 eggs, 2 spoons of cream, 50 ml of oil, 2 spoons of flour, half a bag of baking powder and a pinch of nutmeg.

<strong>Preparation: </strong>

To prepare, first go to the forest to gather nettles, because you should avoid nettles near roads and sources of pollution, but choose a natural environment and make sure that the plant is healthy, that there is no damage, and of course pick with gloves and long sleeves so as not to burn yourself.

When we have picked the nettle, wash it well and drain it. During this time, knead the dough by mixing water, salt, flour and oil. Knead everything nicely until we get a smooth dough. We will leave the dough in a warm place covered with a cloth for about 30 minutes. And during that time we will make the filling by blanching the nettles very briefly and putting them in ice water to keep their beautiful green color.

Then squeeze the nettle from the excess liquid with your hands and finely chop it with a knife. Crush the desired cheese and mix with the nettle. Finely chop and fry the onion and garlic and add to the bowl with the nettle. Break the egg, season with pepper and beat everything with a mixer until you get a compact mixture.

For the coating, we will break the eggs, cream, oil, flour, baking powder, nutmeg in a bowl and beat everything well.

If you have a large table on a sheet, you can spread the dough thinly, if you don't have a large work surface, you can cut the dough into a couple of parts and roll out each part separately.

When we have spread the dough, first coat it with the mixture we prepared, then arrange the filling and gently roll the dough with a sheet. When the pie is ready, transfer it to a baking sheet as desired, I personally like a round one and then arrange the dough in a circle. When we have put the dough in the pan, coat it with the rest of the mixture and, if desired, sprinkle sesame seeds on top.

Then bake in a preheated oven at 200 degrees for about 20 to 25 minutes. And what is important is that when the pie is baked, let it rest for 10 minutes and only then cut it.
