Scones.

  • 250 g of spelled flour
  • 100 g of rye flour
  • 150 g of wheat flour
  • 250 g of potatoes (boiled, mashed)
  • 250 g margarine
  • 2 pieces of egg
  • salt (little)
  • 150 ml milk
  • 0,5 cubes of yeast
  • Kim
  • Sesame
  1. Boil the potatoes and mash them. Dissolve the yeast in lukewarm milk. Beat margarine, add egg, egg yolks, mashed potatoes, salt, added yeast and spelled, wheat and rye flour.
  2. Knead the dough and let it rest for 5 hours in the refrigerator. Then spread it out on a floured surface, then fold it from the left and right sides towards the middle, then from above and below towards the middle. Let it stand for another 30 minutes in the refrigerator. Repeat this procedure 3 times.
  3. Then roll out the dough to a thickness of about 1 cm and use a rolling pin to make patties. Arrange them in a tray, greased or lined with baking paper. Beat the remaining egg whites and coat the scones. Sprinkle with cumin or sesame seeds.
  4. Bake in an oven heated to 200 C, until golden brown. Pleasant!
