Scones with crackers - Danijela Žikić - Recipes and Cookbook online

Scones with crackers. Excellent scones according to my mother's recipe. They are very tasty. They require more time and patience to prepare, but it's really worth it! A true traditional winter specialty!

Scones with crackers, ingredients:

  • 250 ml of warm milk
  • 250 ml of yogurt
  • 2 full spoons of sour cream
  • 1 cube of yeast
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1/2 bag of baking powder
  • 50 ml of oil
  • about 800 g of flour

Filling for coating the dough:

  • 300 g of small crackers
  • 2 full spoons of homemade lard
  • 1 egg for coating

Scones with crackers, preparation:

  • Stir the yeast and sugar in the warm milk and let the yeast rise.
  • In a mixing bowl, pour yogurt, sour cream, oil and salt. Mix it up.
  • Add the new yeast. Gradually add flour and knead a soft dough.
  • Leave the dough to rise for about 30 minutes.

Filling for coating the dough:

  • Mix the small crackers with the lard and mix well. Leave at room temperature. A nice creamy mass is obtained, which is used to coat the dough.

 

  • Knead the resulting dough.
  • Roll out the dough with a rolling pin and spread 1/3 of the crackling and fat filling. Fold the left side of the dough halfway towards the middle. Then fold the right side of the dough halfway towards the middle. Fold the upper part of the dough in half, then fold the lower part of the dough in half. My mom calls that way of folding "folding like a book".
  • Let the dough rest for 15 minutes. Repeat the same process of developing, coating and folding the dough two more times.
  • For the fourth time, roll out the dough 2 cm thick and cut scones with a glass.
  • Cut the top of the scones with a knife, arrange them in a lightly greased baking sheet or on a baking sheet lined with baking paper.
  • Brush with beaten egg.
  • Bake at 220 C for about 30 minutes.
  • Serve warm scones.
  • Pleasant!
