Scones with crackers - Tatjana Stojanović - Recipes and Cookbook online

Scones with cracklings - every year after the pig slaughter, I make sure to make scones with fresh cracklings.

Scones with crackers, ingredients:

  • 1 kg of flour
  • 1 small glass of yogurt
  • 1 piece of yeast
  • 2 teaspoons of salt
  • 1 spoon of sugar
  • 3 eggs
  • 50 ml of oil
  • 250 ml milk
  • 150 ml of water
  • 500 g cracklings
  • 50 g of sesame seeds

Scones with crackers, preparation:

  • Put the yeast in a little warm water to rise.
  • Then add it to the flour, then add milk, water, oil, yogurt, salt, sugar and 2 eggs. Knead a smooth dough and leave it in a warm place for 30 minutes to rise.
  • When the dough has risen, roll it out as thin as possible and coat it with ground crackers. It can be made in the usual way by folding the dough three times for 15 minutes, but this is how I make it: it is faster, and the scones will be even puffier than the first way. So, the dough is rolled into one big roll.
  • Then the ends of the roll are folded from the inside and left to rest for 15 minutes.
  • After that, the dough is rolled out to the thickness of a finger and scones are taken out with a mold or a glass.
  • Arrange the scones in a pan, brush with egg and sprinkle with sesame seeds. Let them rest for 15 minutes and then put them in a heated oven to bake for about 30 minutes at 180 degrees.
