Scones with crackers - Zuzana Grnja

Zuzana Grnja's scones with crackers

  • 1/2 kg of soft flour
  • 20 g of fresh yeast
  • 2 dl of milk
  • 2 egg yolks
  • 1 teaspoon of sugar
  • so
  • ground pepper
  • 250 g of ground crackers
  • some cumin for sprinkling
  1. Crumble the yeast in lukewarm milk. Add sugar, a little flour and cover with a clean kitchen towel and leave in a warm place to rise.
  2. Then roll it in flour, add egg yolks, a little salt and pepper. Knead the medium dough well with milk and roll it out to a thickness of 5-6 mm with a rolling pin.
  3. Then coat the dough with ground crackers and fold it like a book and let it rest for ten minutes.
  4. Repeat the same procedure three times, and then roll the dough to a thickness of 1 cm, and cut it into cubes.
  5. Grease the tray, sprinkle it with flour and arrange the cut cubes. Add a little salt to the remaining egg yolks, beat them, then spread them over the prepared scones. Bake at 200 degrees for about 30 minutes.
