Lenten strudel with sweet potato - Gvozdena Živković - Recipes and Cookbook online

Lean strudel with sweet potato.

Lean strudel with sweet potato, ingredients:

  • 300 grams of thick orange sweet potato puree
  • 2 dl of lukewarm soy milk
  • 200 grams of sugar
  • 1 dl oil
  • 1/2 cube of yeast
  • grated peel of 1 orange
  • 600 grams of flour

For the filling:

  • 2 cups apricot jam
  • 100 grams of raisins
  • 50 grams of dates
  • 100 grams of hazelnuts

If necessary, powdered sugar for sprinkling.

Lenten strudel with sweet potato, preparation:

  • Dissolve sugar in lukewarm soy milk, add yeast. Mix everything gently to dissolve the yeast. Sieve the flour in the bowl where you will knead. Add sweet potato puree and grated orange peel to the flour. Add oil, mix with flour and knead with prepared yeast.
  • Leave covered with foil in a warm place for the dough to double in size.
  • Knead the resulting dough and divide it into two parts. Roll out the strudel crust, spread it with apricot jam.
  • For the filling, soak the grapes to swell, add chopped dates and coarsely ground hazelnuts. Spread the filling over the jam.
  • Do the same with the second crust. Wrap the crusts into rolls.
  • Grease the tray and place the rolls. Coat them with a mixture of water and oil and leave them in a warm place to rise.
  • Bake in an oven heated to 200 degrees for the first ten minutes, then reduce to 180 degrees. At the end of baking, cover the tray with aluminum foil to prevent it from burning. It depends on the oven, bake for a longer time so that your strudel is not gooey.
  • Cover the baked strudel with a cloth napkin and let it cool. Cut, sprinkle with powdered sugar and enjoy the wonderful taste and smell.
