Proja with vegetables or projara - decide for yourself. That's how it happens - they say that the one who doesn't have it in his head has it in his feet... You go shopping and you don't know what you're missing in the kitchen. I thought I had all the necessary ingredients for proja - cornmeal, polenta or corn grits.

However, when I started preparing the ingredients, I realized that the main ingredients are present in small amounts.

For me, proja is a winter food, so I rarely make it during the summer months. But I managed.
I used all the ingredients I had. This is how this dish with vegetables was born. Proja can be consumed during all meals - for breakfast, with lunch, for dinner...

Proja with vegetables, ingredients:

  • 1/2 cup cornmeal
  • 1/2 cup polenta
  • 1 cup wholemeal spelled flour
  • 1 cup wheat flour type 500
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • 1 cup of milk
  • 1/2 cup oil
  • 4 eggs
  • 300 g of cheese
  • 1 red pepper
  • 1 carrot
  • 1/2 small leek
  • ground pepper to taste
    *a cup is 2 dl

Proja with vegetables, preparation:

  • Combine all dry ingredients (flour, polenta, salt, baking powder), add milk, oil and eggs that you previously whipped until foamy.
  • Whisk the mixture.
  • Add finely chopped pepper, leek and grated carrot.
  • Finally, stir in the crumbled cheese.

You can add pepper if you like, and if you don't like it, leave it out.

Proja with vegetables should be baked in an oven heated to 200-220 degrees for about half an hour (until golden brown).

If you don't like to experiment when it comes to flour, you can make proja in the usual way and add vegetables of your choice.

Proja can be prepared with various vegetables such as mushrooms, tomatoes, zucchini, Swiss chard, greens, spinach... You can also add grated pumpkin. Instead of leeks, spring onions can be used.

Let your imagination run wild when it comes to combining ingredients.

If you decide to reduce the amount of vegetables and cheese, add a little more liquid.
