The recipe in question is from Savremeni kuvar (Savremeni kuvar, Prosveta, reprint edition, Belgrade, 1986). You can find a lot of interesting things in the mentioned cookbook, so if you have it and haven't opened it yet, browse it first...

In the cookbook, they recommend a combination of fried fingernails and vegetables. I like the taste of cloves and jaggery. If you like onions, add them when serving.

I changed the original recipe a little, more precisely, I added ground pepper and hot pepper to the dough. I sprinkled the fried knuckles with cheese with grated cheese and sprinkled with lemon juice.

I made half a measure.

The only thing is that I rarely fry anything. And when I fry, I do it next to an open window.

I guess the dough can be rolled out, cut into pieces and baked in the oven. Also, I would cook the knuckles in seasoned water and combine them with some sauce. There are many possibilities for combining.

All in all, I really like the idea.

If you haven't made fried cheese knuckles before, I recommend that you do. The measure is enough for 4 people.

  • 3,5 dl of water
  • 80 g butter (or margarine)
  • 200 g of soft flour
  • 100 g of cheese (grated)
  • 2 eggs
  • oil for frying
  • 30 g cheese (grated for sprinkling)
  1. Put the butter or margarine in the boiling water, and when it melts, add all the flour and cheese at once and mix on the heat until the dough starts to separate from the mixer and the bowl.

  2. Remove from the heat, let it cool, then add the eggs one at a time.

  3. Then scoop out the dough with a teaspoon, place the fingernails on the heated oil and fry them on one side and the other until golden brown.

  4. Roll the finished knuckles in grated cheese and serve with vegetables.

After frying, I put the cloves on a kitchen towel to drain the excess oil.
But I note that this dough almost does not absorb fat.

It's the first time I've fried dough prepared this way and I'm satisfied.

The dough is not greasy, it is airy and tasty.
