Stuffed zucchini - lean, lean, vegan, vegetarian. Make your own stuffed zucchini. I suggest zucchini stuffed with bulgur, seasoned with parmesan, tahini and parmesan.
You can put whatever spices you like. Enjoy a light and delicious summer meal.
Stuffed zucchini, ingredients:
- 4-5 medium-sized round zucchini
- 1 cup bulgur
- 2 tablespoons of Parmesan cheese
- 1 tablespoon of tahini
- spices to taste: salt, pepper, curry, garlic, basil...
- olive oil as needed
Stuffed zucchini, preparation:
- Turn on the oven at 220 degrees.
- Cut the zucchini in half and hollow them out.
- Coat them with oil and bake for about 15 minutes (until they soften).
- While the zucchini is baking, cook the bulgur according to the package directions.
- When the bulgur is cooked, add all the other listed ingredients (chop the garlic and basil leaves.
- Stuff the courgettes and return them to the oven.
- Bake the stuffed zucchini for about 10 minutes.
Stuffed zucchini can be served as an appetizer or as a main course with a seasonal salad.
Instead of bulgur, you can use something else of your choice - rice, millet, kamut, boiled grated potatoes...
It goes without saying that you can add meat of your choice to the stuffed zucchini.
