Farmer's pie.

  • 600 g of flour
  • 30 g of yeast
  • 2,5 dl of water
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 3 eggs (2 eggs for the dough and 1 for coating)
  • 50 ml of oil
  • 300 g of cheese
  • 60 g of fat
  • 60 g of butter
  1. Pour warm water into a deep bowl, stir in the crushed yeast, a teaspoon of sugar and flour, and leave it in a warm place to rise. Pour half of the flour into a mixing bowl, add salt, eggs, oil and added yeast, then mix. Gradually add the remaining flour as needed and knead by hand until a smooth dough is obtained. Leave the kneaded dough to rise. Then knead the dough and divide it into 9 noodles and let them rest for about 20 minutes. Oil a round pan and sprinkle with flour. Take one noodle and spread it with a rolling pin. Put it in a pan and coat it with a melted mixture of fat and butter. Put cheese on top and cover with another crust. Repeat the process until all the material is used. Brush the last crust with beaten egg and sprinkle with sesame seeds. Cut the finished pie into triangles and leave it to rise. Bake in a heated oven at 200 degrees C until golden brown (about 45 min.)

My take on the dough: the dough is well mixed when you cut it in the middle with a knife and there are holes in the dough.
