For example: check how old the baking powder is, ie. when it was produced. If the production date is older than 6 months, be sure that the result will not be exactly as you expected!
  2. Do not prepare the dough too early. Do not prepare it the night before, not even an hour before. Let the dough rest for a reasonable amount of time - say, up to 30 minutes at the most.
  3. Take care of the pan - if it is too thin, your pancakes will burn and possibly burn. If it is too thick, baking will take a long time and the end result will be questionable. Try to find a pan of the right thickness and don't change it.
  4. Use cooking oil, not butter. Butter contains milk residues, which causes the butter to burn. If you really want to use butter for baking, try to find a type that is in a liquid state (clarified butter), where all the milk solids have been removed.
  5. Flipping can be a problem if you try to flip the pancake ahead of time. Take care of it.
  6. Treat the first two - three pancakes as a "test" phase - test the temperature of the pan, i.e. baking, turning time, all the parameters for your pancake recipe to succeed and be the best. Never skip the "test" phase!
  7. Great pancake experts claim that a little acid needs to be added to the pancake batter, which reacts with the baking soda to create a better balance of flavors in your pancakes!
  8. To get airier pancakes, separate the egg yolks and egg whites, immediately beat the egg yolks into the dough, and make a quarter of snow from the egg whites, then add them to the dough at the end, with gentle mixing (turning the dough more than mixing).
  9. With some authors, who claim that their pancake recipe is the best, we found a suggestion not to beat the pancake batter too much, i.e. long. It is even suggested to keep it short and leave small lumps to show. The reason lies in the fact that long whisking creates a large amount of gluten, so your pancakes will be gooey, instead of airy...
