Roll with strawberries – the strawberry season started about a month ago. Every day they are more beautiful and tastier. They are not yet ready for the winter, but they are for cookies.

With strawberries, you can make various delicious treats - cakes and cookies. You don't need any special recipes, you can combine whatever you like.

As an inspiration, I was served by the recipe of Aleksandra Gorek, blog Vanilla & Staubzucker. You can see what her roll with strawberries looks like in the photo. Alexandra's recipe is found HERE.

Strawberry roll - strawberry season started about a month ago. Every day they are more beautiful and tastier. They are not yet ready for the winter, but they are for cookies.

Biscuit:

  • 3 pieces of eggs
  • 0,75 cup sugar ((the cup I used is 2 dl))
  • 1 bag of vanilla sugar
  • 0,5 cup oil
  • 0,25 cup of milk
  • 1 cup of soft flour
  • 1 spoon of cocoa
  • 0,5 teaspoons of baking powder

File:

  • 2 dl sweet sour cream
  • 200 g of fresh strawberries (150 - 200 g)
  • marmalade (if needed)

Decoration:

  • 100 g of chocolate (for the glaze)
  • strawberries (if needed)

Preparation of biscuits:

  1. Beat the egg whites until foamy, add the sugar and beat until it dissolves, then add the yolk, then oil, milk and finally mix in the dry ingredients that you previously combined.
  2. For this quantity, it would be preferable to use an oven tray (I used a 30*30 cm tray, that's why my biscuit is a bit thicker).
  3. Cover the tray with baking paper and bake it for about 10 minutes in a preheated oven at 180 degrees.
  4. Cool the biscuit for a few minutes, then roll it up (together with the paper) and wrap it in a damp cloth.

Preparation of the filling:

  1. Whip the sweet cream and add sugar to taste.
  2. Cut the strawberries into smaller pieces and combine with the sour cream.

Filling:

  1. Unroll the biscuit, spread it with warm marmalade of your choice.
  2. Spread the strawberry filling and sweet cream over the marmalade.

  1. Spread marmalade on the top of the roll as well.

  2. Pour melted chocolate over it and decorate with strawberries.

Chocolate glaze and marmalade (on the top side) are optional. You can sprinkle the roll with powdered sugar and cocoa, for example.

*Note:
If you don't have marmalade that goes well with this roll, you can prepare it from some red fruit - strawberries, raspberries, cherries... I chose raspberries - I combined frozen raspberries and sugar. I cooked them for ten minutes at a medium temperature. If you decide to use strawberries or cherries, after about 10 minutes of cooking, mix them with a stick mixer.

For the raspberry marmalade, I used 250 g of raspberries and 100 g of sugar.

And strawberry juice goes well with a roll with strawberries.
