QUICK LUNCH: Minced Pork in a Bowl is a simple, delicious, low-carb meal that kids and adults alike will love.

The inspiration for this dish comes from Asian cuisine. All the ingredients that go into the preparation of this dish – such as minced pork, cabbage, ginger and garlic – are cooked and served in a bowl.

This is a healthy dish, full of vegetables and protein, but without sacrificing good taste. Finally, it's topped with a super creamy, spicy sauce for extra zing!

Pork in a bowl is full of protein and low in carbohydrates and processed foods.

If you want to make this meal high protein and vegetable based, you can add cauliflower florets, which is the perfect addition to this meal. Also, you can just serve it over rice or noodles if you don't want to cut down on carbs.

If you want to prepare lunch in a hurry, this delicious bowl will be on your table in about 20 minutes. And if you buy a bag of chopped coleslaw, you will reduce the time of preparing this dish and you will have everything in one bowl!

Minced pork in a bowl, ingredients:

For the pork and cabbage:

  • 1 kilogram of ground pork,
  • 1 teaspoon of olive oil,
  • 1/2 cup spring onion (sliced, both white and green part),
  • 1 bag shredded cabbage mix,
  • 3 cloves of garlic (minced),
  • 2 tablespoons of soy sauce,
  • 1 teaspoon of red wine vinegar,
  • 1 tablespoon of ground ginger (or freshly grated),
  • Optional: 1 teaspoon of pounded or ground sweet red pepper.

For the spicy chili sauce:

  • 1/4 cup mayonnaise,
  • 2 teaspoons of chili paste,
  • 1/4 teaspoon salt,
  • Garnish: sesame seeds.

Minced pork in a bowl, preparation:

  • Heat a frying pan over medium heat. Add minced pork, olive oil, and the chopped white part of the spring onion to the pan. Simmer the pork, stirring frequently, for about 5 minutes or until the meat is golden brown.
  • Add the green part of the young onion, chopped cabbage salad, minced garlic, soy sauce, vinegar and minced ginger to the pan. Then, cook for another 3 to 5 minutes or until the cabbage is soft. Add crushed or ground sweet red pepper (if using).

For the spicy chili sauce:

  • In a small mixing bowl, whisk mayonnaise, chili paste and salt.
  • Pour the sauce over the stewed mixture of ground pork and cabbage.
  • If desired, decorate with spring onion rings and sesame seeds.
