LUNCH ON SPEED: pasta salad - illustration, Image by greenschemetv from Pixabay

This delicious pasta salad is full of fresh chopped vegetables. Lemon pesto and mayonnaise dressing are the perfect salad dressing. For the salad, you can freely use farfalle, fusilli or other similar pasta.

Pasta salad, ingredients:

  • pasta, 250 g
  • 1/2 medium cucumber (peeled and diced)
  • 1 cup tomatoes (diced)
  • 70 g ripe olives, diced (drained)
  • 1/2 red bell pepper (diced)
  • 1/4 cup celery (chopped)
  • Optional: 2 tablespoons red onion (finely chopped)
  • 3/4 cup mayonnaise
  • 2 tablespoons of prepared pesto

For the pesto:

  • 2 tablespoons of lemon juice
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt (or to taste)
  • 2 tablespoons fresh parsley (chopped)

Pasta salad, preparation:

  • Cook pasta in boiling salted water, following package directions.
  • Drain the pasta in a colander and rinse with cold water.
  • Set the pasta aside to cool completely, then transfer to a large serving bowl.
  • Mix the pasta with diced cucumber, tomato, sliced ​​ripe olives, pepper, celery and red onion (red onion, as desired and to taste).
  • In another bowl, make the lemon pesto: mayonnaise, pesto, lemon juice, freshly ground black pepper, salt and parsley.
  • Add the lemon pesto to the pasta and toss gently until combined. Taste and add more salt as needed.
  • Cover the bowl and refrigerate until serving time.

Recipe Variation: To make the salad hearty enough to be a main course, add diced cooked chicken, diced cheese or shredded cheese, or diced ham, roast beef or turkey. Also, you can add other types of vegetables, such as, for example: green beans, artichokes, cherry tomatoes, all kinds of beans, etc...

Preparation time: about 30 minutes.
Serves 4-6 people.
