This octopus salad is ideal for hot summer days and is quite easy to prepare. The preparation process is the same for other seafood, only the cooking time is different, octopus generally takes the most time to cook.

  • 1 kg of octopus
  • 1 head of red onion
  • 2 clove of garlic
  • parsley (chopped)
  • 3 pieces of potatoes
  • 0,5 piece of lettuce
  • cherry tomatoes (a few pieces)
  • olive oil
  • balsamic vinegar (can also be ordinary wine)
  • salt (to taste)
  • pepper (to taste)
  • 1 dl of water (in which the octopus was cooked)
  1. Put the cleaned octopus to cook. It takes about 45 minutes or until it becomes soft so that a knife goes through it like butter.
  2. While the octopus is cooking, chop the onion, garlic and parsley and put them in a bowl where you will add the oil and vinegar.
  3. Peel the potatoes and cut them into cubes.
  4. When the octopus is cooked, separate 1 dl of the water in which it was cooked, and put the potatoes in the rest to cook.
  5. While the octopus is still warm, clean the skin as much as possible under running water and chop it into small pieces and add it to the bowl with the onion, parsley and vinegar.
  6. Add salt and pepper to the bowl as desired.
  7. When the potatoes are cooked, add them to the bowl and cover with 1 dl of water that you left aside. If necessary, add more salt and pepper. Mix it all and let it cool.
  8. After this step, you can take out and serve the octopus salad, but I honestly like to arrange it on top of fresh lettuce and finely chop the cherry tomatoes for a lighter taste. Once again, you can pour olive oil to taste.
