Lentil salad it's quick to prepare, and it's delicious. If you don't like to spend too much time in the kitchen, this salad is the right choice for you.

If you soak the lentils in lukewarm water for an hour or two before cooking, you will cook them in about 15 minutes. Lentils, in addition to salad, can be used to make delicious soups, stews, risottos, and the like.

Lentil salad, ingredients:

  • 300 g of green lentils
  • 1 bay leaf
  • 2-3 tablespoons of oil
  • 2-3 tablespoons of vinegar
  • 1 bunch of spring onions
  • to taste, salt and pepper

Lentil salad, preparation:

  • Rinse the lentils (which you have previously soaked) and pour water to soak them.
  • Put the bay leaf and cook on a medium temperature for about 15 minutes, until it softens.
  • Pour off the excess water (if there is any) and add oil, vinegar, salt, pepper, let it cool and stir in the chopped spring onions.

Notes:

  • During cooking, you can add 1 teaspoon of spice mix or other spices to the lentils, to taste.
  • Put the vinegar you like. You can also use lemon juice.
  • I like the combination with balsamic vinegar the most.

You can also add garlic.
