Colorful casserole - this delicious dish does not take much time to prepare, you will definitely like it, because you can choose the vegetables according to your taste. The amount is enough for three people, and the preparation time is 30 minutes. I used the following ingredients.

Colorful casserole - ingredients:

  • 1 medium-sized blue aubergine
  • 2 red tomatoes
  • 2 orange tomatoes
  • 1 onion
  • 2 green bell peppers
  • 1 red bell pepper
  • 200 grams of hard sheep's cheese
  • 3 tablespoons of oil
  • salt to taste
  • a little parsley leaf

Colorful casserole, preparation:

  • Wash the vegetables, cut the blue aubergine into circles with the peel, add a little salt and leave for some time to release the juice. Then put it in a colander to drain.
  • Cut the pepper into slices the size of blue aubergine rings.
  • Also, cut the tomato into circles, let it be the same thickness as the blue eggplant.
  • Cut the cheese into slices, also, as thick as blue and red tomatoes, leaving one piece of cheese for grating.
  • Grease the entire pan. I started to arrange the middle row first, then these two on the side, sprinkle with parsley and onion rings.
  • Grate the cheese on top and cover with the rest of the oil.
  • Heat the oven to 200 degrees, cover the pan with foil and put it in the heated oven to bake.
  • After about fifteen minutes of baking, remove the foil and leave it to bake for a few more minutes.
  • Serve the hot dish with salad as desired.
