Sicilian Parmesan – you must try this dish… you will be surprised, how delicious it is…

  • 3 pieces of eggplant
  • 300 g of cheese
  • 2 cloves of garlic
  • basil (a little)
  • 2 dl. tomato juice
  • 0,5 tablespoons flour
  • salt (to taste)
  • pepper (to taste)
  • oil (to taste)
  1. Peel the eggplant, cut it into thin slices, add salt and let it stand for about 1 hour.
  2. In a little oil, briefly fry the garlic, add a little salt, flour and tomato juice and basil.
  3. The eggplant has released its juice and bitterness, squeeze it and arrange it in a tray, coat each piece with a little oil, then bake it in the oven at 10 degrees for about 250 minutes.
  4. Arrange the eggplant, grated cheese and tomato sauce in an ovenproof dish until you use up the material...put the eggplant on the last row and tomato sauce over it...and add the cheese when the parmigiana is already baked, then put it back in the oven for a minute to melt.
