Poor man's cake - my grandmother Ikonija Bjelica, born Muratović, did not measure anything, everything was approximate, she did not even have a scale, she prepared what was currently in the house for a large family. She spoke Jakavica, she was born in Herzegovina, she spent her whole life there, and she used to come to Vojvodina, more precisely to Stepanovićevo, in the winter.
This is grandma Iconia's story:
"I can't go to Stolac, I won't be back in a day. Yeast in the house is not even a medicine. What will I do? What should I make of flour, water and salt? I'm going to the well to get water, I'm going to knead the dough, so what happens.
Done, like a pie. I will let it rest for a while, I will turn the pan upside down, to sprinkle some flour so that it does not stick. It is neither thick nor thin. I have cream, I will spread it and sprinkle it with salt on top. So, I made it, so it stays a little longer? I'm going to bake it right away, it baked nicely.
I will break it into smaller pieces and bring it to the table. - Bride, what kind of bread is this for you? It's really good, I like it. God it's good, I might make this again for breakfast tomorrow.
That's it, everything was eaten. I didn't try it, it turned out, I will tomorrow."
Poor man's cake, ingredients:
- half a liter of water,
- 850 g to 900 g of flour and
- so,
- cream (fat), to taste (for coating).
Poor man's cake, preparation:
- Sift the flour, add water, fat, salt and knead the dough.
- Let the kneaded dough rest for a while.
- Then turn the pan "upside down" (I used a round pan) and sprinkle it with flour.
- Roll out the dough with your hands into a cake, about 2 cm thick, so that it is neither too thick nor too thin.
- Spread it with cream and salt. Add salt to taste. If you don't have cream, you can use lard. And he doesn't have to do any of that.
- Bake the scone in the preheated oven for about twenty minutes, or until it is baked.
