Savory roll with poppy seeds. In my opinion, strudel would be a sweet version of a roll with poppy seeds, - makos rétes. 

When preparing a salty roll with poppy seeds, you can use the ingredients of your choice for the filling. I had cream butter and pickles.

I bought a turkey breast, combined everything, seasoned it and the filling for the savory roll with poppy seeds was ready in an hour. I advise you to finely chop the cucumbers, and not to grate them, because the taste is different. Most say they like it when pickles "crunch".

If you want to speed up the chopping process, you can use an electric chopper for pickles and turkey breast.

Biscuits for savory rolls with poppy seeds are prepared from whole eggs, regardless of the fact that the usual method of preparation is from egg whites.

Ingredients for sponge cake:

  • 4 eggs
  • 3 level spoons of flour
  • 2 spoons of ground poppy seeds
  • 2 tablespoons of unground poppy seeds
  • 4 tablespoons of oil
  • to taste: salt and pepper

Ingredients for the filling:

  • 250 g of cream butter
  • 150 g of turkey breast
  • 3-4 pickles
  • to taste: salt and pepper

Preparation of biscuits:

  • Beat the egg whites with a pinch of salt.
  • Mix the other ingredients in another bowl.
  • Gradually add the egg white to the mixture of the other ingredients and mix until you get a uniform mixture.
  • Cover the tray with baking paper, pour the mixture, flatten and bake for about 8 minutes at 180 degrees.
  • Cool the biscuit for a minute or two and wrap it in a roll together with baking paper, and then wrap it in a damp cloth.

*This quantity is for a tray measuring 30*30.
*If you have a larger or smaller tray, increase or decrease the ingredients accordingly.

Preparation of the filling:

  • Finely chop the cucumbers and the turkey breast.
  • Combine with other ingredients.

*Instead of turkey breast, you can use something else of your choice.
*You can replace the cream butter with cream cheese.

Filling:

  • Unwrap the cooled biscuit, spread it with the filling and roll it up.
  • Spread the savory roll with poppy seeds as desired - cream butter, sour cream, mayonnaise or some mixture and sprinkle with poppy seeds, ground crackers or grated trappist.

Keep the roll in the refrigerator for several hours before cutting. It would be best to "overnight".
