Sweet from figs.

Fig candy, ingredients:

  • 1,3 kg of figs (ripe)
  • 1 kg of sugar
  • 200 ml of water

Sweet from figs, preparation:

  1. Wash the figs and remove their stems.

  2. Place a saucepan on the stove, pour in the sugar, add cold water just enough to dissolve the sugar.

  3. Let the sugar and water boil and then put the figs down, shake the pan gently to distribute them evenly and reduce the temperature to moderate (from the highest temperature, as it was at the beginning).
  4. The mass should be simmering all the time, do not stir it with a pressure cooker, but by gently shaking the pan, stir the contents from time to time.
  5. As soon as white foam starts to appear on the surface, start skimming it off.
    After about 60-70 minutes from the moment when the sweet began to boil, use a tablespoon to take out some juice on a small plate, wait a few moments to see if the sweet is cooked.
  6. When it's done, remove the pan, cover it with a damp cloth and leave it to cool, usually overnight.
  7. Wipe the jars well with a warm damp cloth so that they do not remain sticky on the outside!
