This recipe for beetroot juice contains all the fruits and vegetables that are typical for autumn days: apples, lemons, Mediterranean celery. You can optionally add spinach.
- 1 piece of beetroot (with leaves)
- 1 lemon (peeled)
- 2 sprigs of Mediterranean celery
- 1 apple (peeled and peeled)
- 1 handful spinach (young, optional)
- Wash the beets well and cut them into smaller pieces. Save the leaves too. Put in a multipurpose blender with strong blades, because the beetroot is very hard and needs to be chopped first with the blades.
- Transfer the beetroot pulp to a regular blender.
- Wash the apple well, peel and remove the seeds, and cut it into smaller pieces. Wash, peel and cut the lemon into smaller pieces. Wash Mediterranean celery, separate two sprigs and cut into smaller pieces. Transfer all chopped vegetables to a blender for processing. Optionally, you can add a handful of chopped baby spinach.
- Process from several times, increasing the speed. Serve in glasses, garnished with Mediterranean celery leaves.
